Martyn Nail set to join the Dorchester as culinary director

The Dorchester in London is set to announce the appointment of Martyn Nail as culinary director.

Nail, who was executive chef of Claridge's for 36 years, left the Maybourne Hotel Group in April along with head chef Adam Peirson.

He will start as culinary director of the Dorchester on Monday 18 July overseeing all areas of the hotel's culinary operations, reporting to Richard Newell, director of food and beverage.

Nail joins as the five-red-AA-star, 250-bedroom hotel is in the midst of its biggest renovation since 1989. The first phase of the renovations are taking place in the entrance to the hotel, the Promenade and the bar, plus two guest floors. Designer Pierre-Yves Rochon is designing the property's interiors, and Martin Brudnizki Design Studio is redesigning the hotel bar.

The former executive chef of Claridge's will begin work next week as the hotel remains open while the work is taking place.

As part of the renovations, the Dorchester will be putting more than 2,000 items up for auction next month.
