108 Brasserie introduces new chef's table tasting concept

The 108 Brasserie in London's Marylebone has introduced a new chef's table named Table 9, which will serve a tasting menu from £45 per person.

The eight-seat table offers a selection of five tasting menus from executive chef Russell Ford, including three courses from £45-£55, four courses at £60, and five courses from £75-£120. The restaurant's culinary style is British-Mediterranean, aiming to offer a "neighbourhood" feel.

Dishes will change according to local produce seasonality and availability, with typical options such as roast breast of Gressingham duck confit with hash, turnip and apple brandy; lobster tortellini with confit fennel and shellfish bisque; and carpaccio of beef with black truffle dressing with rocket and shaved pecorino.

The restaurant first opened in November last year, after a full renovation from its former life as the 108 Bar and Grill. Ford joined as executive chef, bringing previous experience from the Grove hotel, Le Méridien Piccadilly, the Dorchester, and the Kensington hotel's Aubrey restaurant.

Former Asia de Cuba and the Club at the Ivy manager Tanya Yilmaz took over as opening general manager, while Ivo Ferreira de Silva opened the bar, having joined from the Athenaeum hotel.

The site also features a 108 Pantry, and a bar, respectively designed for afternoon tea and light lunches, and cocktails. It also serves breakfast, brunch, and lunch.
