Chef Elizabeth Haigh to open Shibui in London

Elizabeth Haigh, former chef at the Michelin-starred Pidgin in London, is set to open her first restaurant, Shibui, in London later this year.

Due to open in September, the concept restaurant will be the first from Haigh's company Kaizen House, Kaizen being the Japanese philosophy of continuous improvement, while Shibui is an old Japanese adjective, broadly translating as ‘beauty in simplicity'.

Shibui will focus on wood fire cooking, balanced dishes and influences from Europe and Asia, and offer refined barbecue dishes with inventive flavour pairings.

A preview of the restaurant took place as a pop-up at Marylebone's Carousel London in January, serving fusion dishes such as buttermilk ramen chicken with miso and caviar, koji beef and apple miso butterscotch.

Haigh left Pidgin shortly after it was awarded a Michelin star in the 2017 Michelin Guide. Prior to that she was head chef at Neil Rankin's Smokehouse in Islington, north London, and chef at the Michelin-starred Kitchen Table in Fitzrovia, west London.
