The latest restaurants, bars and hotels to open their doors across the UK in May 2022

From the Highlands to the south coast, new establishments are popping up across the country every week. New hotels, restaurants and bars launch into the world headed up by familiar faces and industry newbies alike.

Jimmy Lee has opened Salt and Chilli Oriental in Hamilton, Scotland this month, serving bread, buns and baked goods. In Heathrow Airport a new Vagabond has opened its doors. Read more about what to expect from these new businesses below.

Here are the latest openings from this month.

Hotel Amano Covent Garden, London

Berlin-based boutique hotelier group Amano has opened its first international hotel in London's Covent Garden, marking the beginning of its expansion plan in the British capital. The 141-room property, featuring art from London-based design studio Woods Bagot, has taken the space of Drury House, a 1980s office building.

Amano Rooftop offers a creative selection of cocktails and bar snacks, while the Amano bar in the hotel's basement hosts DJs on the weekends. The hotel group's culinary director, Ronen Dovrat Bloch, will oversee the menu at Israeli-Spanish fusion restaurant Penelope's, which is to open as Amano's signature dining venue this autumn.

The hotel is designed for solo and business travellers, couples and families wanting to explore London. It features ‘Cosy', ‘Comfy' or ‘Roomy' bedrooms and five ‘Goldy' rooms with freestanding gold bathtubs and views over the surrounding Covent Garden area.

The Amano group was established in 2009 and currently has 10 hotels across Germany, with three more in the planning stages.

Salt and Chilli Oriental, Hamilton, Scotland

Chef Jimmy Lee continues his expansion of British-Cantonese street food brand Salt and Chilli Oriental in Scotland, with his latest restaurant launch in Hamilton. The menu is available for collection and delivery Mondays to Sundays, 3pm-9pm.

Vagabond Heathrow

Vagabond has launched its wine bar and kitchen in Heathrow Terminal 5, offering an extensive breakfast, lunch and dinner menu, as well as over 100 different varieties of wine. It will be open seven days a week from 5.30am to 10.30pm.

Kian Samyani and JKS Restaurants have opened their second Berenjak in London's Borough Market. The open-kitchen venue serves an array of family-style sharing platters inspired by Kian's childhood, as well as diverse selection of Middle-Eastern wine.

Noble Palace is to open, serving dishes from China's eight culinary regions. The Mi Bar will provide a range of ‘emotion-based' cocktails, while the Mi Lounge will offer whiskies.

Firebird

Open fire restaurant and natural wine bar Firebird is to open in London's Soho, with a Mediterranean-style menu filled with wood-fired, grill-based sharing dishes featuring seasonal produce.

Space Station bar, Paradise Skate World, Manchester

Junkyard Golf Club founder Chris Leigh and Sophie-Larissa Houghton, founder of roller-skating venue Paradise Skate World, have teamed up with bartender Joe White to create an intergalactic-themed bar in Manchester.

Launched as part of Paradise Skate World, the bar will serve cocktails with a summery, space-roaming twist, such as Mercury Rising, a vodka-based cocktail, and Paradise Isn't Always Tropical, which is tequila-based.

White has been involved with Gorilla, Hula and the launch of the Henry C neighbourhood cocktail bar in Chorlton and CBRB (Cocktail Beer Ramen + Bun) in Manchester city centre.

The interior design of the space station bar will also embrace this galaxy-gliding theme, with a palm-a-lite installation that creates the effect of an imaginary pier.

Laurel's On the Roof is a 1970s Hollywood-inspired all day-dining and drinking venue featuring Californian dishes and cocktails. Live DJ sets will also take place every Thursday, Friday and Saturday night.

Indus at Park Regis, Birmingham

Traditional Indian restaurant Indus has opened in Birmingham's Park Regis hotel. The restaurant, headed by chef Manish Patel, offers a menu celebrating the flavours and generations of northern Indian cuisine.

Sam Buckley's Yellowhammer is to open as a neighbourhood bakery in Stockport's old town, serving sourdough bread made from organic flour produced by small-scale British farms. The venue can also turn into a wine bar and provide space for pottery workshops.

Black Bear Burger, Exmouth Market, London

Black Bear Burger is to launch its second sit-down eating venue in Exmouth Market. It will feature an open kitchen, cocktail bar and space for alfresco dining. Co-founder Stew Down is committed to using fresh British produce and grass-fed, dry-aged beef.

The Ivy Asia, Mayfair

Six by Nico, Aberdeen

Scottish-Italian chef Nico Simeone has launched his the tenth restaurant under his Six by Nico brand, in Aberdeen city centre.The concept restaurant offers a six-course tasting menu themed around a location, memory, or idea, that will completely change every six weeks.

In Aberdeen, the first menu ‘the Chipper' features dishes based on items served in British fish and chip shops reimagined with a new twist. These include chips and cheese, fish supper, steak pie and the Scottish-favourite deep-fried Mars Bar, which is served with Irn Bru sorbet and chocolate soil. The six-course menu is priced at £37 per person with an optional £30 wine pairing.

The 72-cover restaurant features a 50-cover bar area and open kitchen where guests can watch their dishes being prepared.

Simeone founded the Six by Nico concept in Glasgow in 2017 and it has since expanded to Edinburgh, Belfast, Dublin, Manchester, Liverpool and London.

Dishes at the other nine Six by Nico restaurants are currently themed around ‘Hollywood', with dishes inspired by well-known films. New concepts are announced two weeks before they begin.

Inhabit Queen's Gardens, Lancaster Gate, London

Inhabit Hotels has launched its second London boutique hotel across a crescent of 19th-century townhouses near Lancaster Gate. It features 158 rooms including 10 suites, 13 interconnecting rooms and four accessible rooms.

Inhabit's properties are designed to support ‘a healthy mind and body' as well as environmental initiatives. All bedrooms include a phone lock-box to encourage ‘screen-free time' and televisions feature a meditation channel with guided classes.

The hotel's 70-cover restaurant has been created by Devon health retreat Yeotown and serves a meat-free menu with dishes such as rice paper vegetable wraps, barbecue cauliflower wings and grilled salmon on edamame and mung bean fettucine.

At the bar, the focus is on organic, bio-dynamic and natural wines and small UK spirit producers. Guests can also order the signature protein smoothie after a workout.

An on-site wellness centre hosts daily yoga and pilates sessions and features a Peleton bike. Guests can join live classes streamed directly from Peleton's New York studio or choose from a library of workouts.
