Chef Carlo Scotto has left Amethyst in London's Mayfair due to "differences with his business partners" after 12 months of trading.

In a statement he said: "The last 12 months has been an exciting yet challenging journey and I'd like to thank my customers for their support. We picked up many positive reviews and accolades in our 12 months of trading, including being the only new recipient of four AA rosettes this year.

"I am going to take a short break while I consider my options to ensure my next role allows me to continue to showcase my passion for fine dining and commitment to delivering some of the best food in the UK. Stay tuned, I am excited for the next chapter."

The restaurant was listed in the Michelin Guide for its "12-course surprise menu of delicate and fine-looking dishes" and described by Grace Dent in a The Guardian review as "one of the UK's best restaurants".

Scotto announced that he was opening Amethyst when he was head chef of Xier in London's Marylebone in April 2021.

Amethyst offered a three- (£45) and five-course (£55) lunch, a six-course tasting menu (£90) and a 12-course experience (£150), inspired by Scotto's travels in Scandinavia and Japan, with typical dishes includuing scallops with caviar, galangal and matsutake and foie gras with rose petal salmon, yuzu and Piedmont hazelnuts.

Amethyst is listed as ‘temporarily closed' on Google.
