Billingsgate Seafood School offer sustainable events for industry

The Billingsgate Seafood Training School is to launch a series of sustainability workshops for anyone working with fish who wishes to update their knowledge.

The charitable company works alongside Billingsgate Fish Market in London to increase the knowledge of people in the hospitality industry working with fish and shellfish.

All commercial activities undertaken by the school go towards funding for courses for school children free of charge.

Devised by CJ Jackson, CEO of the Seafood Training School, the first session in the series will take place on 4 April, followed by two more on 3 May and 6 June. The events are available for a small booking fee (to cover breakfast) for chefs, catering managers, restaurateurs and those within foodservice.

The sessions will allow interested groups and individuals an opportunity to have an educational guided visit around Billingsgate Market trading floor during operational hours and to experience the global species on offer, understand the quality and fish and shellfish available and to meet the characters on the ground at this iconic London market.

A fish breakfast is served in the school kitchens after the market visit.
